Stonefish Kudos Caberent Sauvignon
The fruit is hand-harvested, de-stemmed and lightly crushed to ensure a slow release of sugar, tannin and flavour, this results in higher levels of aromatics. A cool fermentation in traditional open top fermenters, with hand plunges 3 times daily ensures full extraction of tannin and flavour. Aed in French oak barriques for 14 months, the wine displays a deep fuby red colour enhanced with blue flecks with aromas of blackberry and cassis. The palate displays precise flavours of ultra fine red fruit tannin, blueberries and liquorice. Persistent and lingering, the finish is elegant and focused.
